In the Crock Pot:
3 lbs skinless, boneless chicken breasts, halved
1 can pineapple slices, drained (16 oz)
1 can mandarin oranges, drained (15 oz)
2 tablespoons cornstarch
3 tablespoons brown sugar, packed
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon ground ginger
Combine all ingredients, except chicken, in the crock Stir well. Add the meat and stir to coat. Cook on Low for 6 to 8 hours; or HIGH fo 3 hours. Serve with rice.
Tips: Can also add a package of frozen mixed oriental veggies to this.
