WADF Potato Patties

Ingredients

3/4 cup water
1/2 teaspoon salt
2 Tablespoons margarine
1/2 cup milk
2 eggs
1/2 cup sour cream or Philadephia Cream Cheese Cooking Cream
1 1/2 cups Hungry Jack Potato Flakes
3 slices bacon, fried
2/3 cup shredded cheddar cheese, your choice of flavor

Cooking Directions:

1.  Fry bacon and set aside to cool.
2. In medium saucepan, bring water, salt and butter to a boil.
3. Stir in milk and eggs.
4.  Add flakes and cooking cream and stir until smooth.
5. Crumble bacon and add.
6. Add cheddar cheese. Mix well.
7. Form into balls and flatten into patties.
8. Spray frying pan with cooking spray or melt a teaspoon of butter and coat pan.
9. Place patties in frying pan. Fry over med. heat for 3-5 minutes or until each side is golden brown. Remove.

  1. Tip: These tasty atties are a cross between mashed, baked and hash brown potatoes. Serve with sour cream, or ketchup, or simply butter and pepper. Philadephia Cream Cheese has several flavors of Cooking Cream near your cream cheese in the grocery store - Italian Herb, Garlic and Santa Fe, as well as Original. Try all for different flavors.

  2. Other variation: 1 teaspoon parsley flakes and 1/4 cup Parmesan cheese. Use your imagination onions, mushrooms, tomato slices, salsa all work well to spice up this delicious recipe.

  3. Note: Makes approximately 8 medium sized patties; Works well for breakfast or dinner.

Baked Orange Chicken

Ingredients

4 boneless chicken breasts
1/4 cup margarine or butter
2 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 cups orange juice
1 orange, peeled and sliced into pieces

Cooking Directions

1. Slice chicken lengthwise to make eight pieces.

2. In an 13 x 9 x 2 baking dish, coat bottom and sides with cooking spray and lay chicken in bottom of pan.

3. Peel and slice orange and lay over chicken in pan.

4. In large skillet, melt 1/4 cup of margarine on medium high heat.

5. Add flour, salt and cinnamon. Stir until bubbly.

6. Add orange juice, stirring until well blended.

7. Let cook, stirring frequently until juice thickens and boils.

8. Pore over chicken and orange slices.

9. Bake at 375 degrees for about 35 minutes or until tender.

Tip: Finished chicken is moist and sweet; serve with rice and vegetables.

WADF Southwestern Chicken

Ingredients

1 pound of chicken (2-3 medium breasts)
¼ cup onions minced
2 cloves garlic
6 or 8-ounce can chopped green chilies
Small amount of chicken stock or water
¼ cup Philadelphia Cooking Cream
1/3 cup shredded cheddar or jack
Olive oil
Salt, pepper

Method

  1. Put 1 tablespoon olive oil in skillet and heat.

  2. Cut chicken to bite size pieces.

  3. Sauté until brown, add onions and garlic halfway.

  4. Add scant bit of chicken stock/water to moisturize.

  5. Add green chilies and cream.

  6. Simmer until chicken is done and sauce thickens.

  7. Top with cheese and let melt.

  8. Serve over rice, beans, corn or any vegetable, or use as substitute for taco meat in any taco recipe.
