Macaroni Shrimp Salad

Ingredients:
2 cups macaroni, cooked
1/4 cup onion, finely chopped
1/4 cup green pepper, finely chopped
1 can broken shrimp
1/4 cup pimiento, finely chopped
2 hard boiled eggs, diced
1 cup mayonnaise or Miracle Whip
3 Tbsp. French Dressing

Mix all ingredients together except mayonnaise and french dressing. Mix french dressing and mayonnaise together and blend into macaroni-shrimp mixture. Refrigerate until serving.

Tip: The longer this sits before serving the more pronounced the flavor. Try to make at least six hours before serving.

Spinach Dip

Ingredients:
  • 9 oz. frozen spinach, thawed
  • 1/2 c. mayonnaise
  • 1/2 c. sour cream
  • 1 garlic clove
  • 1 c. Parmesan, grated

Method:

  1. Preheat oven to 375.
  2. Mix all ingredients and place in glass or ceramic baking pan.
  3. Bake 20-25 minutes or until fully heated.

Tips:
  • For added flavor, add a 6 oz. jar of (drained and chopped) artichoke hearts.
  • Red peppers make the perfect garnish for the top.
Serves 10-12.

Lemonade Chicken

A great recipe for the grill. Chicken cooks to a beautiful golden brown with a flavorful fresh taste.

Ingredients:
  • 1 - 12 oz. frozen lemonade concentrate (thawed)
  • 1/3 cup Soy Sauce
  • 1 tsp. Seasoned Salt
  • 1/2 tsp. Celery Salt
  • 1/8 tsp. Garlic Powder
  • 1 dash of Cayenne Pepper
  • 6-8 - 6 oz. Boneless/Skinless Chicken Breast

Method:
  1. In a sealable container, combine lemonade concentrate, soy sauce, and seasonings to make a marinade. Mix well by shaking.
  2. Place chicken breasts in a single layer in a shallow 13x9 dish. Pour marinade seasoning mixture over the chicken.
  3. Allow the chicken to marinate for at least 1 hour.
  4. Grill or B.B.Q. the chicken over a briquette or gas grill at medium heat. Brush chicken with marinade while cooking. Turn the chicken breasts often as not to burn. Remove when cooked completely.

Tips:
  • Garnish with lemon twists and parsley if desired.
Serves 6-8.

Easy Hash Brown Potato Casserole

Difficulty: **

Mix:
  • 1 package (24 oz.) frozen hash browns
  • 2 cups sour cream
  • 1 can cream of chicken soup
  • 1/4 cup margarine, melted
  • 1 teaspoon salt
  • 1 tablespoon minced onion
  • 2 cups shredded cheddar cheese
Top with:
  • 2 cups coarsely chopped cornflakes
  • 1/4 cup margarine, melted

Method:
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients thoroughly and pour into 2 quart casserole pan.
  3. Top with cornflake crumb mixture.
  4. Bake for 50-60 minutes.

Serves 8-10.
